I need "Show Full Name in Diagram" switched on permanently,
but when I select this in Preferences it doesn't "stick".
A short time later (who knows why) we are back to "First and Last Name Only".
Its driving me crazy.

Have you tried placing the cursor over one of the name boxes and then scrolling up and down with the scroll ball (or wheel)?
The 'topmost' selection when scrolling should give you what you want.
