iFamily will simply save the Gedcom file to your hard drive in the iFamilyData folder, it will not send the file to anyone.

If you do need to send it to LDS, or anywhere else that needs your details as the author of the data, then you should enter the appropriate data for the (Submitter) SUBM and (Submission) SUBN records.
