Create one family or two?

If I create a family file to include both my mother's side and my father's side, can I later share via GEDCOM just one side?

If yes, is there a short description of how - or perhaps a link to earlier discussion of same?

If no, my question would be:
If I create two families - 1) my mother's side and 2) my father's side, could I then on iFAMILY combine them, adding one to the other?
