I am having trouble removing photos placed by accident to a person. Also how does one choose which picture to display if there is more than one picture added to a person?

In the main screen select the "Pictures" tab. The left-most photo in the resulting screen is the photo which will show for the specified person. One can use a place-holder if one doesn't want any specific photo to be displayed. The photos can be repositioned by dragging and dropping them. Of course if one wants to remove the photos altogether they can simply be deleted.
