I attempted to edit the fact, but the fact type is greyed out. I cannot change it from BIRTH to BAPTISM.

How Edit Fact Types?
In iFamily you cannot edit the event type for Births, Deaths and Marriages.
If you have a Birth event that should be a Baptism event then you must add a new event for the Baptism.
You could then delete the Birth Event but I would simply edit its date to be a " " before" date, and maybe also edit its Place, Notes and Source References

All three of them are frequently in need of changing:
Births - Baptism or Christening
Marriage - Intentions
Death - Buria or Funeral
